Mix fondant. Color 3 lbs. of fondant Teal Green, a small amount of Red (or use Ready Made Red Fondant), Royal Blue, and Lemon Yellow and set aside in air tight bags or containers.
Make a surfboard. Roll out a small amount (the size of a surf board) of white fondant ¼” thick. Using Red fondant make two thin ropes the length of the surf board. Place the red ropes on top of the white fondant and using a rolling pin, slowly roll over the red fondant with light pressure to blend the white and red fondant into each other. Cut a surf board shape with a Knife & Ribbon Insertion Tool and set aside to firm.
Create 2 swim fins. Roll out the Royal Blue colored fondant to 1/8” thick and cut two small swim fins. Using a fondant tool make two impressions at the larger end of the flipper for seams. Set aside to firm.
Make a small beach ball. Roll the Lemon Yellow fondant into a small ball to use as a beach ball and set aside. Using scraps from the surf board and swim fins, roll them out very thin and cut red and blue strips for beach ball colors. Adhere the strips to the yellow beach ball with a dab of water. Set aside.
Base ice a single layer 10” cake with a thin layer of white icing. Then, roll out the Teal Green fondant to a 1/8” thickness in a section large enough to cover the cake.
Insert four dowels in the 10” cake and cut level with the top of the fondant. This will keep the second layer from sinking into the first.
Base ice a single layer 8” cake placed on a corrugate cake board with a thin layer of white icing. With an open coupler, pipe a frosting ridge across the middle of the cake to create a “wave” once the fondant is applied. Roll out enough Teal Green fondant to 1/8” thick to cover the cake. Cover the cake.
Tip: Apply the fondant with a firm, gentle smoothing action. A vertical pinhole can rid you of any air bubbles trapped underneath.
Place the 8” cake on the 10” cake slight offset to allow more space at the front of the cake.
Airbrush, using Royal Blue, on sides and top of cake to add dimension.
Make some waves. Roll out more Teal Green fondant and using a Fondant Pastry Cutter to cut 1”W wavy strips for the waves to go around the bottom of each tier twice (about 112”L of waves). If desired, to add dimension airbrush the outside layer with Royal Blue and the inner layer Teal. Adhere each layer of wave to the sides of both the bottom and top layers using dabs of water.
Open the DecoSet® Cake Topper. Place the background behind the wave and the snorkeling Minion on the cake. With a dab of water on the back, place the surf board on the lower left and the beach ball on the top. With icing adhere the floating Minion and the swim fins to the cake. Place the surfing Minion pick onto the surfboard.
With Piping Tip #3 and white icing, pipe squiggly foam on top of the wave, in front of the beach ball, floating Minion, snorkeling Minion, and swim fins. Pipe additional small dots randomly along the waves as shown.
