Bake 24 cupcakes in standard white cupcake wrappers.
Fill 18" pastry bag with chocolate icing.
With Piping Tip #807, pipe a ring of chocolate icing around the outside of each cupcake.
Immediately roll each cupcake in Red Sanding Sugar.
Mix Premium Neon Orange Gel color with 1 Cup white icing, until desired color level is achieved.
Fill 18" Disposable Color Pastry bag with neon orange and another with white icing. Cut about 1 1/2" off the tip of both bags. Insert both into a 21" pastry bag. Cut off tip.
Tip: Use a Two-Color Pastry Bag if you have one.
Using XL Piping Tip #807, pipe one ring of icing around the outside of the cupcake and stop. Then, pipe a second ring on top of the first, slightly smaller. Finish by piping a third ring on top of the second and swoop the bag away to leave a finished top.
Place Star Wars The Force Awakens Cupcake Rings on top of each cupcake in color swirls.
